Notes

Notes for Gluten-Free Cottage Cheese Muffins:
  1. Flour Substitution: Swap the all-purpose flour for your favorite gluten-free flour blend. For the best texture, choose a blend that includes a mix of rice flour, potato starch, and tapioca flour.
  2. Baking Powder: Double-check that your baking powder is labeled gluten-free to avoid any cross-contamination.
  3. Binding Agent: If your gluten-free flour blend doesn’t contain xanthan gum or guar gum, add 1/4 teaspoon to help hold the muffins together and improve texture.
  4. Flavor Enhancements: Add diced veggies (like spinach or bell peppers), fresh herbs (like parsley or thyme), or gluten-free shredded cheese to customize the muffins to your taste.
  5. Alternative Flour Options: For a slightly nutty flavor, try almond flour, or go for rice flour if you prefer a lighter texture.
