the Tart Crust:
- 1 ½ cups 180g all-purpose flour
- ½ cup 115g unsalted butter, chilled and cubed
- ¼ cup 50g granulated sugar
- 1 egg yolk
- 2 tbsp ice-cold water
- ½ tsp salt
the Yogurt Cheese Filling:
- 2 cups 500g Greek yogurt (full-fat)
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- Zest of 1 lemon
For the Topping:
- 6 –8 fresh figs sliced
- 2 tbsp honey for drizzling
- ¼ cup chopped pistachios or almonds optional
- Fresh thyme or mint for garnish optional
Prepare the Yogurt Cheese
Line a fine-mesh strainer with cheesecloth and place it over a bowl.
Add the Greek yogurt to the cheesecloth, cover, and refrigerate for at least 6 hours or overnight to drain excess liquid.
Once thickened, transfer to a bowl and mix in honey, vanilla extract, and lemon zest. Refrigerate until needed.
Make the Tart Crust
In a large bowl, whisk together flour, sugar, and salt.
Add chilled butter and use a pastry cutter or fingers to mix until the texture resembles coarse crumbs.
Stir in the egg yolk and ice water, mixing just until the dough comes together. Do not overwork.
Shape into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
Preheat the oven to 375°F (190°C). Roll out the dough on a lightly floured surface and press into a tart pan. Trim any excess dough.
Prick the bottom with a fork, line with parchment paper, and fill with baking weights.
Bake for 15 minutes, remove the weights, and bake for another 5 minutes until golden. Let cool completely.
Assemble the Tart
Spread the yogurt cheese mixture evenly over the cooled tart crust.
Arrange fresh fig slices on top in a decorative pattern.
Drizzle with honey and sprinkle with chopped pistachios if using.
Garnish with fresh thyme or mint leaves.
