Ingredients
  

the Tart Crust:

  • 1 ½ cups 180g all-purpose flour
  • ½ cup 115g unsalted butter, chilled and cubed
  • ¼ cup 50g granulated sugar
  • 1 egg yolk
  • 2 tbsp ice-cold water
  • ½ tsp salt

the Yogurt Cheese Filling:

  • 2 cups 500g Greek yogurt (full-fat)
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Zest of 1 lemon

For the Topping:

  • 6 –8 fresh figs sliced
  • 2 tbsp honey for drizzling
  • ¼ cup chopped pistachios or almonds optional
  • Fresh thyme or mint for garnish optional

Instructions
 

Prepare the Yogurt Cheese

  • Line a fine-mesh strainer with cheesecloth and place it over a bowl.
  • Add the Greek yogurt to the cheesecloth, cover, and refrigerate for at least 6 hours or overnight to drain excess liquid.
  • Once thickened, transfer to a bowl and mix in honey, vanilla extract, and lemon zest. Refrigerate until needed.

Make the Tart Crust

  • In a large bowl, whisk together flour, sugar, and salt.
  • Add chilled butter and use a pastry cutter or fingers to mix until the texture resembles coarse crumbs.
  • Stir in the egg yolk and ice water, mixing just until the dough comes together. Do not overwork.
  • Shape into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
  • Preheat the oven to 375°F (190°C). Roll out the dough on a lightly floured surface and press into a tart pan. Trim any excess dough.
  • Prick the bottom with a fork, line with parchment paper, and fill with baking weights.
  • Bake for 15 minutes, remove the weights, and bake for another 5 minutes until golden. Let cool completely.

Assemble the Tart

  • Spread the yogurt cheese mixture evenly over the cooled tart crust.
  • Arrange fresh fig slices on top in a decorative pattern.
  • Drizzle with honey and sprinkle with chopped pistachios if using.
  • Garnish with fresh thyme or mint leaves.

Serve & Enjoy!

  • Slice and serve immediately or chill for 30 minutes for a firmer texture.
  • Best enjoyed the same day but can be stored in the refrigerator for up to 2 days.
