Ingredients

  • 2 cups Greek yogurt plain or flavored
  • 1/4 cup honey or maple syrup
  • 1/2 cup mixed chocolate chips milk or dark
  • 1 cup mixed fresh berries raspberries, blueberries, strawberries
  • 1 tablespoon granola for topping

Instructions

  • Mix the Yogurt and Sweetener: In a large bowl, combine the Greek yogurt and honey (or maple syrup). Stir until smooth and well combined.
  • Add Chocolate Chips and Berries: Gently fold in the chocolate chips and mixed berries, being careful not to mash the fruit too much.
  • Prepare the Pan: Line a baking dish or loaf pan with parchment paper. Pour the yogurt mixture into the pan and spread it out evenly with a spatula.
  • Top with Granola: Sprinkle granola evenly over the top of the yogurt mixture for a crunchy texture.
  • Freeze: Place the pan in the freezer and let it freeze for at least 4 hours, or until the bars are firm.
  • Cut and Serve: Once frozen, remove from the pan, cut into bars, and serve immediately.
Keep any leftovers in the freezer for a maximum of 2 weeks.

Notes

  • Yogurt Choice: You can use plain or flavored Greek yogurt based on your preference. Flavored yogurt will add extra sweetness without needing as much honey or syrup.
  • Berry Variations: Feel free to swap the berries for other fruits like mango, peaches, or bananas for different flavor combinations.
  • Chocolate Chips: You can use milk, dark, or even white chocolate chips, depending on your taste preference.
  • Granola Topping: For added crunch, try using a crunchy granola with nuts or seeds for more texture.
  • Freezing Tip: Make sure the bars are fully frozen before cutting them, as they’ll hold together better and be easier to serve.
  • Storage: These bars can be stored in the freezer for up to 2 weeks, so they’re perfect for meal prep or keeping on hand for a quick, cool treat.
