Ingredients
  

  • 4 medium-sized tortillas whole wheat or gluten-free, as needed
  • 5 large eggs
  • ½ cup cottage cheese low-fat or regular
  • ¾ cup shredded cheese cheddar or mozzarella work great
  • 1 cup fresh spinach chopped
  • ½ cup shredded tomatoes or finely diced
  • ½ cup milk dairy or plant-based
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt to taste
  • 1/8 teaspoon black pepper
  • Optionally, sprinkle freshly chopped parsley or chives on top for a burst of flavor and color.

Instructions
 

Prepare the Tortilla Base:

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a round pie dish or baking dish.
  • Place one tortilla in the dish, ensuring it fits snugly, and trim the edges if necessary.

Prepare the Filling:

  • In a medium mixing bowl, whisk together the eggs, milk, cottage cheese, garlic powder, onion powder, oregano, salt, and pepper until well combined.

Assemble the Quiche:

  • Spread the chopped spinach and shredded tomatoes evenly across the tortilla crust.
  • Sprinkle half of the shredded cheese on top.
  • Pour the egg mixture evenly over the vegetables.
  • Sprinkle the remaining shredded cheese over the top.

Bake the Quiche:

  • Bake in the preheated oven for 30–35 minutes, or until the eggs are set and the surface turns a lovely golden hue.

Cool and Serve:

  • Allow the quiche to rest for about 5 minutes after removing it from the oven before serving."
  • Slice into wedges and serve warm.
