Ingredients
  

  • 2 ripe mangoes peeled and diced
  • 3-4 habanero peppers seeded for milder heat or leave seeds for extra spice
  • 1/2 cup white vinegar
  • 3 garlic cloves minced
  • 1 tablespoon lime juice
  • 2 tablespoons sugar
  • 1/2 teaspoon salt

Instructions
 

  • Prepare Ingredients: Peel and dice the mangoes, seed and chop the habaneros, and mince the garlic.
    Cook the Base: In a saucepan over medium heat, combine mangoes, habaneros, garlic, vinegar, sugar, and salt. Simmer for 10-15 minutes until the mangoes soften.
    Blend Until Smooth: Let the mixture cool slightly. Blend it until smooth, being cautious with hot liquids.
    Adjust Flavor: Add lime juice and adjust salt or sweetness as needed.
    Store: Transfer the sauce to a sterilized jar or bottle. Refrigerate and allow the flavors to develop before use.

  • Heat Level: Adjust the number of habanero peppers to control the heat. Evacuating the seeds and layers can too diminish the spiciness. 
  • Sweetness: The honey is optional and can be adjusted based on your preference for sweetness. Mango naturally adds sweetness, so taste before adding honey.
  • Acidity: You can experiment with different types of vinegar to alter the flavor profile. Adding the lime juice at the end brightens the sauce.
  • Consistency: If you prefer a thinner sauce, you can add a little water or additional vinegar while blending.
