Ingredients

  • 1 cup unsalted butter softened
  • 3/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

Preheat:

Heat your oven to 350°F (175°C). Lightly grease an 8x8-inch baking pan or line it with parchment paper.

      Cream Butter & Sugar:

In a large bowl, beat the softened butter and brown sugar together until light and fluffy.

          Add Egg & Vanilla:

Mix in the egg and vanilla extract until well combined.

              Combine Dry Ingredients:

In another bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt.

                  Combine:

Slowly incorporate the dry ingredients into the wet mixture, stirring until just blended.

                      Fold in Chocolate:

Gently fold in the semi-sweet chocolate chips, ensuring an even distribution.

                          Bake:

Evenly spread the batter in the prepared pan and bake for 20 minutes, or until the edges turn golden and a toothpick inserted in the center comes out clean.

                              Cool & Serve:

Allow the bars to cool completely in the pan before cutting them into 12 bars. Enjoy your delicious treat!

                                  Notes

                                  • Butter Matters  – For extra chewiness, use room-temperature butter. If melted, the bars may turn out greasy.
                                  • Brown Sugar for Moisture  – Using brown sugar instead of white adds moisture and a rich, caramel-like flavor.
                                  • Customize It!  – Swap semi-sweet chocolate chips for dark chocolate, white chocolate, or even dried fruits for variety.
                                  • Gluten-Free Option  – Use gluten-free all-purpose flour and certified gluten-free oats for a gluten-free version.
                                  • Storage Tips  – Store bars in an airtight container at room temperature for up to 5 days or refrigerate for up to 2 weeks.
                                  • Freezing for Later  – Freeze individual bars by wrapping them in plastic wrap and placing them in a freezer-safe bag for up to 3 months. Thaw at room temperature before enjoying!
